Home-cooked Fried Noodles

Prepare the required ingredients.

Cut the ham sausage into slices and the choy sum into cubes.

Stir the eggs well.

After boiling the water, put the noodles in a pot and cook for 4-5 minutes.

Stir the noodles with chopsticks to prevent them from sticking to the bottom, while adding a small bowl of cold water. Then put in the right amount of salt and oil.

Remove the noodles and drain the water, add an appropriate amount of oil and stir well.

Heat up the pan with hot oil, pour the egg mixture into the pan over medium heat and stir fry quickly.

After the eggs are fried until they are formed, add the sliced ham and choy sum.

Add the noodles to the wok and stir fry. Adjust from small to medium heat and stir fry for 7 minutes.

Finally, add appropriate amount of light soy sauce, oyster sauce, salt, and sugar and continue to stir fry for 2 minutes until the noodles are delicious.

Pinch out the noodles and put them out of the pot.
Tips:
1. Drain the noodles before frying;
2. In order to prevent the fried noodles from sticking to the pan, add a proper amount of cooking oil to the noodles, stir with chopsticks, the noodles are stained with oil, which can play a lubricating effect and prevent the noodles from sticking together;
3. Immediately separate the noodles with a spatula after the noodles are put in the pan, and stir-fry them continuously when frying;
4. Before fried noodles, you only need to blanch the noodles below the water, you don't need to cook them. If the noodles are boiled softly at the beginning, they will become softer when they are fried, making it easy to scum.
