Home Cooked Yellow Croaker

Butcher the yellow croaker clean, trim off the fins and scrape the scales off

Use a knife on both sides of the fish body

Cut the green onion and ginger, and prepare the star anise

Heat the wok, add some vegetable oil
5.
Add green onion, ginger and star anise to burst the fragrance

Pour in soy sauce and sauté

Add a proper amount of water and add yellow croaker until the water level is half of the fish body.

Bring to a boil, add salt to taste, a little dark soy toned

Add sugar to refresh

Add rice vinegar to remove fishy smell and enhance fragrance

Add cooking wine to further remove fishy

Simmer on low heat for 15-20 minutes, shaking the pot several times during the period to prevent sticking to the bottom, turn off the heat when the fish is thick in the soup

Pick out the green onion, ginger, star anise, and carefully move the fish into the plate

Put the soup into the pot, collect the juice on high heat until it is thick, add the coriander section, and turn off the heat

Just pour the soup on the fish
Tips:
1. Use oil to saute the light soy sauce while removing the raw flavor of the soy sauce;
2. Don't turn the fish when stewing it, it will break, just shake the pot to prevent sticking to the bottom;
3. When out of the pot, pour the fish with the soup into the large plate, and then pour the soup back into the pot.
