Home-made Sauerkraut Rice Noodles

Prepare the main ingredients: rice noodles, eggs, sauerkraut.

Chop the sauerkraut. Wash ginger, garlic, and green onions and mince. Soak the rice noodles in clean water.

Beat the eggs in a bowl and add a little salt to beat them.

Put oil in a pan and heat the eggs to fry them. Scoop out and set aside.

Put oil in the pot again, heat up, add ginger, garlic, and pepper to fry until fragrant, then add sauerkraut and fry, add appropriate amount of pepper and sugar.

After sautéing, add the broth (use water if there is no broth).

Burn open into scrambled eggs. Add chicken essence and shallots. (Salt flavor is added appropriately by yourself) The flavor soup is ready. Pour into a suitable container.

Put an appropriate amount of water in the pot to boil, add the soaked rice noodles and cook.

Drain the cooked rice noodles into the big wrist.

Pour the flavor soup, add some sesame oil, stir well and serve.
