Wash the ingredients. Cut the louver knot, cut the chicken heart into half, slice the chicken gizzard, cut the chicken intestines and leek into sections, and cut the chicken liver into pieces.

Put the oil in a hot pan and sauté the ginger and garlic until fragrant. Add the chicken giblets and stir-fry until the color changes. Pour in the cooking wine, vinegar, light soy sauce, sugar, cover and simmer for 30 seconds, then add 150 ml of boiling water and simmer for 2 -3 minutes.

Add the leeks, salt, chicken essence, and pepper, stir fry evenly.
