2. Soak the cut potatoes and lotus root slices in water and set aside.

3. Set aside the green onions, ginger, garlic, dried chili, and Erjingtiao at seven o'clock.

4. The amount of bean paste is appropriate, I use the bean paste made by my mother.

5. Heat the pot, pour the oil into a boil, first put the bean paste, then add ginger, garlic, dried chili, Erjingtiao, etc. into the pot and fry until fragrant (if you have prepared the spices, you can put them together), and fry until fragrant Then add an appropriate amount of water.

6. Add appropriate amount of water to a boil, add the scallions, (if meat dishes are prepared, put them in and boil first), add the prepared vegetables and boil.

7. Bring the vegetables to a boil, reduce the heat to a simmer, cook until the vegetables (meat dishes) are fully cooked, and serve.

Tips:

When frying the ingredients, just fry them until fragrant. It should not be outdated, which will affect the taste.
