Homemade Dried Sausage

When buying the foreleg meat, let the meat seller cut it into enema.

Then put in all the spices

Grab it evenly with your hands and marinate for more than three hours, turning it a few times in the middle to make it easier to taste

After buying the casings, use a pump to inflate them, soak them in water for a while, and wash the salt on them.

Then put it on the mouth of the enema, as shown in the figure

Then put the marinated meat in the enema, and start the enema, slower to prevent the casing from breaking if you are too strong

Fill all the sausages one by one, then put them in a well-ventilated place and hang them to air-dry. It takes about ten days. Then the steamer can be steamed with water.
