Homemade Gold and Silver Garlic Sauce
1.
Peel garlic.
2.
Put it into a blender and smash it in two batches, once the particles are larger.
3.
The particles are smaller at a time, so you don’t need to mix them too much.
4.
Mix the minced garlic that has been stirred twice and let it stand for fifteen minutes so that the air is in full contact with the garlic.
5.
Take bay leaves, cinnamon bark, star anise, fragrant amomum, and Chinese pepper and wash.
6.
Drain the washed spices and dry them. If you don’t have time to dry, you can do like this. Heat the wok without oil, and pour the spices into the pan to dry.
7.
After the spices are dried, pour the peanut oil into the pot, slowly fry the spices on a low fire, fry them out, and remove them with a colander.
8.
Pour 2/3 minced garlic in the pot.
9.
Turn on a small fire and stir constantly with a shovel.
10.
Continue frying on low heat until the minced garlic turns golden.
11.
Pour in the remaining 1/3 minced garlic.
12.
Add a spoonful of table salt.
13.
Add a spoonful of light soy sauce.
14.
Add a spoonful of oyster sauce.
15.
Add a spoonful of soybean paste, stir the seasonings and turn off the heat.
16.
After the garlic paste has cooled down, put it in a container and keep it tightly sealed.
