Homemade Hot Dry Noodles

First of all, use a small amount of hydration to boil the alkaline noodles, add a little salt, and dissolve, then slowly pour it into the flour, and use chopsticks or hands to stir into the noodles

Continue to add a little water to make a harder dough. The dough must not be too soft. It doesn't matter if it is just a little bit. Anyway, it will be smooth after a while.

Let the dough rest for 10-20 minutes, and then knead it again. It will be used to make tahini or something at this time.

Press the noodles out with a noodle pressing machine

When pressing the dough, remember not to press it too thin, otherwise it will not taste good, it will be thicker than usual

When the pot is open, put the noodles out of the pot, boil them for 7 years, remove them in cold water or blow them dry with a fan, mix the noodles evenly with a little oil, and it’s still cold. I used cold water.

The ratio of sesame sauce to peanut butter is adjusted to 1:1. Both of these sauces are homemade at my home. They are thicker and diluted with a little sesame oil. Do not dilute with water, as they will not taste good.

A little light soy sauce, add salt, chicken essence, pepper, white sugar, add a little hot water or cool boiled, stir well, hot dry noodles need a little bit of water to taste, too dry to taste bad and greasy

When the water boils, put the noodles in the pot, boil them out again, add the sesame paste and seasonings, and sprinkle with chopped green onions!
Tips:
1. You can add some side dishes, bean sprouts and other things by yourself, mainly my house is gone, just make it directly like this, the taste is also great!
2. Capers, mustard greens and crispy radish are added depending on your preference, but I didn’t add them if I didn’t buy them.
3. I originally prepared crushed peanuts, but I forgot to put it, and it tastes better.
4. I personally think that the spiciness of hot dry noodles comes from pepper, if you like it spicy, you can add some chili oil
