Homemade Mala Tang

Wash fresh chicken kidneys.

Prepare dried fungus and soak with water.

Boiled chicken blood. (Boil water in the pot, pour fresh chicken blood into the pot when it is about to open, use chopsticks to clamp small pieces, reduce the heat to the minimum and cook, do not let the water boil, cook until there is no blood in the water, turn off the heat, remove the soaking water)

Wash Ji Zhen Mushroom and set aside.

Peel the lettuce, wash and cut into thick slices, slice the ham, and wash the bamboo shoots.

Wash millet peppers and cut into circles.

Wash and chop the shallots.

Shred the ginger, mince the garlic, cut the shallots into sections, wash and cut the dried chili into sections.

Chicken kidney cutting knife, add shredded ginger, a little white pepper, half a spoon of light soy sauce, half a spoon of cooking wine and some salt.

Stir and marinate with chopsticks.

Cut the washed beef into thin slices.

Add half a spoon of cooking wine, half a spoon of light soy sauce, half a spoon of oyster sauce and a little white pepper.

A spoonful of sweet potato starch.

Grab it with your hands and set aside, add a little vegetable oil, and pick it well.

Prepare the base material. (It can be sold in supermarkets or vegetable markets. I don’t like the brands.)

Put an appropriate amount of oil (twice as much as usual for stir-frying) in the pan to heat up, add dried red peppers and sauté.

Add ginger, garlic and shallots.

Put some peppercorns. (If you can't eat, you can leave it alone or less, and if you like to eat hemp, you can add more)

Pour boiling water. (Approximately two liters) The high fire is boiled and the low fire is boiled.

Add a spoonful of light soy sauce and simmer for about ten minutes.

Adjust to medium heat and add bamboo shoots.

Put in the fungus.

Add Jizhen mushrooms and cook for about ten minutes.

Add the cooked chicken blood.

Finally, add lettuce and ham slices and continue to cook for two or three minutes. (Because I like to eat crispy lettuce, if you like soft and rotten lettuce, you can cook it more)

Scoop all the dishes into a large bowl.

Turn on high heat, put the beef in, and cook for about a minute to turn off the heat.

Remove the beef and put it on top.

Sprinkle with millet pepper and chopped green onion. (Add or reduce millet peppers according to your own preference, do not eat spicy, do not add)

Sprinkle another handful of sesame seeds.

Just pour the soup on top of the vegetables.

3Because the hot pot base has a salty taste, I only added some light soy sauce to taste without adding extra salt. (Heavy taste can be added appropriately)
