Homemade Roll Noodles with Cold Skin

Add water to the flour and stir it into a flocculent shape with chopsticks.

Then take a large basin and set it aside for later use, and add water to the small basin with the dough to wash the noodles.

Wash until the water is milky white, then pour the water into the large basin, and continue to add water to the small basin to wash the face.

Continue to add water to wash the face and repeat this operation.

When washing the noodles for the second time, the dough is a little loose. You can filter it with a colander. This is not a problem, and it will stick together after washing.

Wash the dough until the water is not turbid, and the dough is slightly yellow and sticks together in a honeycomb shape. It is fine. The small dough that has been washed is gluten, and it is set aside for later use.

Filter the washed face water with a colander to avoid small flour residues in it. After filtering, set it aside to settle for at least four hours.
