Flour, amaranth juice (amaranth juice: the juice of amaranth soaked in boiling water), salt and knead into a dough, knead again for 20 minutes, and continue for 20 minutes;

Put the good dough into a basin, and add half a basin of water.

Rub it like washing clothes until the water thickens. Filter the washed starch water through a fine sieve to avoid gluten crumbs in it.

The remaining gluten is very small.

Then let it settle for at least 4 hours. Pour out the clear water on top of the precipitated starch water. Don't pour it all up, leave a little, otherwise the remaining batter will be too thick. Mix well. The dough after mixing looks pale purple;

Then use a plate with boiling water and steam for 5 minutes. Then peel it off, put it in the oiled pan, and apply a layer of oil on it to prevent dryness and cracking and adhesion. Finish all the batters one by one.
Tips:
Cut the prepared cold skin, and cut the steamed gluten into the open. You can add your favorite seasoning and mix well. Personally, I think garlic and chili oil are necessary.
Add a little baking powder or baking soda to the remaining gluten and knead evenly. Put it in a pot and steam for 15 minutes.
