Homemade Scallion Pancakes

The flour is mixed with old yeast, fermented for 4 hours (with Angel yeast for 40 to 60 minutes), add alkaline dough and knead for use.

Prepare: sesame oil, five-spice powder, sesame seeds, green onions.

Use a rolling pin to roll the dough into an oval thick slice, brush with sesame oil, and evenly sprinkle with salt, five-spice powder and chopped green onions.

Slowly roll up the thick dough sheet from one side, as shown in the picture.

Use both hands to hold the two ends into a snail-shaped round cake.

Sprinkle sesame seeds on the upper and lower sides of the round cake, roll it out thinly with a rolling pin, and shape it.

Heat the pan (the temperature should not be high), add refined oil, and put the cake in the pan.

Bake the cake until it becomes light yellow, turn the cake over and bake the other side. After turning over two or three times, the pie is evenly ripened by heating.

The mature pie is crispy on the outside and soft on the inside.
