Personally, I suggest that it is better to be fat, because the thin and dry bacon is easy to jam between the teeth.

1. Prepare raw materials: pork belly with skin, salt, ginger, tangerine peel, cooking wine, pepper, five-spice powder.

2. Wash the ginger and mince. Wash the tangerine peel and chop.

3. Mix the pork and dried tangerine peels evenly, add an appropriate amount of cooking wine.

4. Continue to add the appropriate amount of salt, pepper, five-spice powder, and ginger, mix well, and let it sit for two days. Turn it over again during the period.

5. After marinating for two days, hang the bacon and dry in brine.
