Hot and Sour Dry Mixed Vermicelli

Soak the sweet potato vermicelli in hot water until soft and set aside

Dice soaked cowpea, red pepper, garlic, and ginger into cubes for later use

Boil water in a pot and add sliced pepper and ginger until boiling, pour in vermicelli, and cook until transparent. Pick up cold water and put in a plate for later use.

Heat the pan, fry the red pepper diced, garlic and ginger diced from the pot and pour into the vermicelli plate, add the diced cowpea, soy sauce, salt, vinegar, sesame oil and mix well.
Tips:
The hotness and sourness can be based on your own situation. The fans are not easy to cook for too long. You must have cold water, otherwise they will stick together.
