Hot and Sour Noodles

1. Soak the wide noodles in clear water one night in advance, take an empty bowl, add lard, minced ginger garlic and red hot pepper
2. Add a spoonful of vinegar
3. Add light soy sauce and sesame oil
4. Add a few drops of pepper oil
5. Add a spoonful of oil chili
6. Pour the boiled broth
7. Put water in another pot, add salt to boil
8. Add in the soaked wide powder and quickly blanch it
9. Remove and add coriander to the soup
Tips:
1. I personally think that this one made with lard is more fragrant. If you are afraid of getting fat, replace it with vegetable oil, but the vegetable oil has to be fried in advance
2. The wide noodles can be blanched for ten seconds. If they cook for too long, they will be rotten and chewy.
