Hot and Sour Potato Shreds

Ingredients: potatoes, dried chili, ginger, garlic.

Seasoning: vegetable oil, cold vinegar, salt, pepper powder.

Shred the dried chili and ginger, and cut the garlic into garlic rice for later use.

Peel the potatoes and cut them into thin shreds. Put the cut potato shreds in a container and rinse with water twice to wash away the excess starch.

Pour an appropriate amount of vegetable oil into the pot.

When the oil is 50% hot, add dried chilies and ginger and stir fry (the oil temperature should not be too high, otherwise the chilies will turn black).

When the dried chili is discolored, add potato shreds and stir-fry evenly, then add appropriate amount of vinegar to continue stirring.

Add appropriate amount of salt and pepper powder.
9.
Add a little water and stir fry for 2 minutes.
10.
Add raw garlic when out of the pan and stir-fry evenly.
11.
Sprinkle with chopped green onion.
Tips:
The garlic must be put before it is out of the pot.
