Hot and Sour Potato Shreds

The potatoes are sliced first, and then shredded. Don't cut too finely.

Rinse the cut potato shreds with clean water three to five times and drain the water.

Put water in a pot, bring to a boil, put one gram of white vinegar and one gram of salt. Then add potato shreds, blanch until the surface is transparent, about 1 minute, out of the pot, rinse with cold water three times.

Put oil in the pot, heat it to 80% heat, add the pepper, fry the pepper, and throw away the pepper.

Add shredded potatoes, white vinegar, rice vinegar, light soy sauce, sugar, salt, coriander, and cook.
