Hot and Sour Potato Shreds

Wash and peel potatoes

Cut into thin shreds (I feel that potato shreds cut by hand are better than rubbed ones)

Wash the cut potato shreds 2-3 times with water to remove the starch

Then add 1 teaspoon of rice vinegar with water and soak for 5 minutes, then remove the water control (so that the fried potato shreds are refreshing and non-sticky)

Cut dried chili into sections

Add pepper and chili in a hot pot with cold oil and fry on low heat until the color changes

Pour shredded potatoes and turn to high heat to quickly stir-fry. At the same time, add 1/2 teaspoon of rice vinegar and stir-fry quickly.

Add salt and sugar to taste and stir well

Add a little light soy sauce and 1/2 teaspoon rice vinegar and stir-fry until broken

Tips:
1. After pouring potato shreds, stir fry on high heat
2. Soaking potato shreds with rice vinegar can make the fried potato shreds more crispy.
3. Rice vinegar should be added twice when frying potato shreds, so that the fried potato shreds will be more sour, crispy and delicious
