Hot and Sour Potato Shreds

Two prepared potatoes peeled and sliced

After slicing and shredding, try to cut as thin as possible for a better taste

Prepare a pot of cold water, soak the sliced potato shreds in cold water for about 10 minutes, change to a pot of cold water (mainly to remove potato starch) and fry it until it becomes crisp

Time to soak the potato shreds, prepare the chili segments and garlic to be used (the garlic can be flattened or sliced)

Next, put the peanut oil in the pot and fry the chili in a hot pot.

Pour in the soaked potato shreds and stir-fry for about 3 minutes (ie the potato shreds soften)

Pour in the light soy sauce and aged vinegar and stir fry for about 3 minutes (if you feel unfamiliar, stir fry for two more minutes)

Finally, add garlic to enhance the flavor and stir fry properly. Add salt and chicken broth and stir fry for a while before serving.

The finished product, this is sour and refreshing. I usually eat a bowl of rice with this hot and sour potato shreds and another bowl
Tips:
If you don’t want to be too spicy, remember not to cook the chili for too long
