Tell you how to fry well, how to control oxidative redness of potatoes, and how to make potato shreds crisp! Minimal but not simplify.

Hot and Sour Potato Shreds

1. Potatoes are scraped and soaked in water to prevent oxidation

2. Cut thin slices and shreds to wash away the starch

3. After washing, soak in clean water for five minutes (this will make it crisper when fried)

4. Green and red pepper cut into thin strips

5. Boil the dried chilies in a pan and add a little salt. Pour the potato shreds and green and red pepper shreds and stir fry, and add a little MSG. Pour the old vinegar along the side of the pot and stir fry

6. Hot and sour potato shreds complete

Tips:

It is not recommended to add white vinegar in pursuit of bright colors. Old vinegar is more fragrant and delicious.
