Hot Soup Hand-rolled Noodles

Add appropriate amount of water to flour to form a dough, knead it until it is smooth, put it in a basin, and cover with plastic wrap.

Soak the spinach in light salt water for about 10 minutes, and wash it repeatedly for later use.

Divide the good dough into 3 small doughs, knead them evenly, roll them into long strips with a rolling pin, just fit into the noodle machine, and then use the noodle machine to press them into thin noodles.

Then use a noodle pressing machine to press the noodles into noodles. My family usually chooses thin noodles, which are suitable for the appetite of the whole family.

All the noodles are ready, add an appropriate amount of water to the pot, boil the water and add the noodles. Cooking the noodles is also very simple. After boiling, add the right amount of tomato sauce, boil over high heat and pour cold water, pay attention to stirring frequently, do not paste the bottom of the pot, boil the noodles for the third time and cook just right.

The key step is here. When cooking the noodles, set up a frying pan, peel the green onions, wash and chop them, sauté the peppercorns and discard them, saute the green onions, add light soy sauce to taste, and minced garlic will taste better. The sauteed green onion or minced garlic is poured directly into the noodles to taste very fresh. The fragrant green onion or garlic is more rich, which is much better than the hot pot.

After the noodles are cooked, turn off the heat, add the spinach, add salt, pour in the fried green onions, season them, and remove them from the pan.
