Huamei Pork Ribs

1. Pour the plum into the red wine and soak for about ten minutes.

2. Wash the ribs and chop small pieces into a pot of cold water to boil.

3. Wash off the foam and drain for later use.

4. Pour an appropriate amount of salad oil into the pot, add the sliced ginger and green onion, and fry until it is browned. Remove the green onion and the ginger.

5. Put the oil in the pot into rock sugar and continue to fry on low heat until the rock sugar melts and turns into an amber color.

6. Pour in the ribs and stir fry until they are colored.

7. Pour in the brewed red wine and plum (together with the red wine), then add hot water until the ribs are covered, add a little salt and soy sauce to boil, then turn to medium-low heat and simmer for about 40 minutes.
