Improved Eel Crispy Tofu

Preparation materials: old tofu, carrots, white radish, cucumber, coriander, salt, vinegar, red oil, pepper oil, sugar, light soy sauce.

Wash the vegetables, rinse the old tofu with running water, then cut into squares, and then change the knife into triangular blocks;

Heat the oil in the pot and fry the tofu over a medium and low heat until it is golden and hard and crisp (the oblique cut noodles may not be fried, which is convenient for subsequent operations. The hardness of the tofu can be determined according to personal preference);

After the tofu is fried, take it out of the pan and let it cool for a while, then use a knife on the diagonally cut surface, and then use a small spoon to scoop out part of the tofu;
