Japanese Potato Salad (late Night Cafeteria)
1.
Wash potatoes, peel and cut into small pieces, wash carrots, peel and dice, wash cucumbers and onions, wash and dice, dice ham, and cook eggs.
2.
Marinate the onions with light soy sauce for half an hour (the raw onions will be very hot, and the onions will become sweeter after marinating. If you don’t like it, you can leave the onions) in a boiling pot, add some salt, and boil the potatoes
3.
Wait for the potatoes to boil (about 10 minutes), remove them, add carrots and cucumbers and cook
4.
Add the boiled potatoes to the food processor and puree them
5.
Add the marinated onion while it's hot (you can do it if you don't like it, but you must add it while it's hot and discard the excess soup)
6.
After stirring evenly, pour the chopped boiled eggs, carrots, cucumbers, and ham all into it and stir together
7.
Wait until the mashed potatoes are all cool, then add the mayonnaise (you can add as much as you like), and stir well.
8.
Stir evenly, put on a plate
Tips:
1. The onion must be added while it is hot, and the mayonnaise must be added after it has cooled
2. The mayonnaise is made by yourself, it is not as delicious as it is sold outside. . .
