Japanese Style Potato Salad

Peel the potatoes and cut them into hob pieces, dice carrots and ham, chop red ginger and cut cucumber into thin slices, mix well with appropriate amount of salt and marinate for 10 minutes

Boil the pot with water, add the potatoes and cook, drain the water and set aside

Add mashed potatoes, carrots and diced ham, eggs, dried cucumber slices in a pot, add Kubi salad dressing, sake, Japanese ginger slices, salt and pepper, and mustard sauce and mix well

Mustard dressing and salad dressing can be increased or decreased according to your own taste
