Kirin Eggplant

1. Cut two long eggplants into 4 pieces with a notch in the middle

2. Add salt, chopped green onion, five-spice powder, cooking wine, light soy sauce, vegetable oil, and egg white to the meat filling and mix well

3. Put the minced meat on the eggplant and coat with a layer of starch

4. Put the eggplant in the pan and fry until golden, remove the oil to control

5. Heat oil in a pan, sauté the chopped green onion, add water, salt, sugar, tomato sauce, five-spice powder, and bring to a boil

6. Put the fried eggplant into a pot, heat up the sauce, add half of the sauce, add water, starch, and chicken essence.
