Kuaishou Three-layer Breakfast Cake

Knead a piece of dough: pour 60-70% warm water into the flour and knead it into a smoother dough. Because it is eaten for breakfast, knead it one night in advance and put it in the refrigerator overnight. It is very soft and moisturized and can be placed in a basin. It can be stored in a fresh-keeping bag and kept in cold storage; if you eat it with plenty of time, you can knead the dough for at least 30 minutes before using it;

These are the main ingredients for pancakes the next morning: take the dough out of the refrigerator to dissipate the air; pork filling, cabbage, carrots, and green onions are all prepared the night before, just pick it up and use it;

Cut cabbage into pieces, carrots into pieces, and mince them in a meat grinder; this step is recommended to make fresh. Chopping and smashing vegetables in advance will cause excessive loss of vitamin C and affect the taste; the speed of using a meat grinder is very high. Quickly, these two materials can reach the ideal state within 2 minutes;

Chopped cabbage, chopped carrots and minced meat are put in the same bowl, add appropriate amount of salt and light soy sauce to mix evenly; the juice in cabbage can be absorbed by the minced meat, so there is no need to kill water or fetch water;

Divide the good dough into 2 equal parts, and round them separately; use one part first, put the part that is not used temporarily in the basin, and cover the lid to prevent the water from evaporating;

Roll out the dough into a rectangular piece of dough with a thickness of about 3 mm. Spread 2/3 of the dough with fillings, leaving white on all sides;

Fold the white noodles over, cover 1/3 of the filling, and stretch around so that the two layers of the crust can be neat with the filling;

Fold the double-layer filling skin to a single layer, completely cover it, and then turn it over so that the joint is facing upwards, and pinch the joint tightly with your fingers to prevent the soup from leaking during baking;

Pour a proper amount of oil in the baking pan, put the cake in the middle of the baking pan, and bake it on one side for about 1 minute, the shape becomes hard, turn it over and bake it, cover it with a small fire, turn it over twice halfway, and bake a piece of cake. It’s 5 minutes; you can burn the dough here, and you can operate the second dough in the same way as the previous steps, which saves a lot of time. Bake until golden on both sides, and the middle pie can be out of the pan when the belly bulges.
Tips:
1. The ingredients in the filling can change with the seasons, and the ratio of meat and vegetable is not fixed, just as you like; cabbage and other vegetables contain more juice, and the nutrients such as vitamin C, calcium, and minerals are also high. It's not a killer, it is directly mixed into the meat, no nutrition is lost;
2. If you have breakfast, you must prepare these materials in advance and knead the dough well, so that you can get it done in a short time without rushing;
3. The dough is kneaded with wheat flour, and you can also add an appropriate amount of coarse grains, such as corn flour, brown rice flour, oatmeal flour, etc., to increase more dietary fiber and nutrients.
