Leek and Egg Box

Divide the whole wheat flour into two, blanch half of the noodles in boiling water, knead the noodles with the remaining room temperature water, knead until smooth, and cover with plastic wrap. You can also choose not to blanch the noodles, and make up the dough for more than half an hour in advance;

Prepare the leek stuffing at the time of the noodles, wash the fresh leek, control the moisture and chop, wash and chop the dried shrimp;

Put the leek stuffing in a basin, pour in an appropriate amount of oil and mix well, then add salt, five-spice powder, mushroom powder, and pepper, and mix well;

Add shrimp skins and mix well;

Knead the good dough into long strips, and evenly cut into small noodles;

Roll into a pie crust, wrap two pie crusts in a box, first put the pie crust on the plate, the crust is relatively large, you can’t hold it in your hands, add the mixed leek filling, then beat in an egg, and lay the egg yolk with a toothpick. ;

Then cover it with another pie crust and knead it together in a circular motion. You can also knead a lace;

If there is an electric baking pan, it is best to use an electric baking pan to control the temperature of the pancakes. If you don't use a pan, apply a thin layer of oil. Put the wrapped leek and egg box into the pot and slowly burn it over a low heat;

Turn it over and cook it;

If you cut it open, the color of the crust will be whiter if you use high-gluten powder, but the whole wheat flour is more nutritious and full of wheat flavor. My family likes to eat whole wheat noodles.
Tips:
1. The difference between this leek egg box and the usual fried leek egg stuffing is that the eggs do not need to be cooked in advance, and there is no need to break them up. The baked box is a complete egg cake.
2. This box should be larger than the usual leek and egg box to avoid dripping out of the egg liquid during pancakes.
3. The hot noodle cake is soft, and the non-hot noodle cake is strong. You can choose the noodles according to personal preference.
