Loach in Clay Pot and Yam
1.
Fresh loach (not very good in the hand 😅), pour it into the basket and rinse.
2.
Prepare a spoonful of salt, pour it into the basket, and then quickly cover it.
3.
I use a stainless steel basin lid. I also have a transparent lid at home. The action should be fast, because the loach will slide out quickly when it touches the salt. It is recommended to put the salt in the left hand and close the lid quickly with the right hand, and wait a few minutes .
4.
After a few minutes, the basket can be opened when there is no movement in the basket. Seeing that there is some mucus in the basket, the loach basically won't move anymore.
5.
The salted loach (a recent photo 😰) is still sticky at this time.
6.
Then rinse the faucet several times, the mucus on the loach body can be washed off, and the hand will not slippery, which proves that the cleaning is almost complete.
7.
After washing the loach, you can prepare the soup ingredients. Peel the yam, take a handful, and add a few pieces of lean meat for later use.
8.
Slice the ginger and cut the yam into small pieces.
9.
Boil the diced lean meat in cold water.
10.
Heat the pan again, add a little oil and two slices of ginger.
11.
Pour the cleaned loach, stir-fry for a while over medium heat, and serve.
12.
Put the sliced ginger, yam, Cishi, boiled lean meat and fried loach together in a soup pot and bring to a boil.
13.
After the fire is boiled, there will be scum, which is taken out with a spoon.
14.
After the froth is filled, continue to boil on high heat for 10 minutes and then turn to low heat for 40 minutes. When the soup turns white, you can add salt and season it out.
15.
After boiling the loach soup, the color of the soup turns white, just drink the soup and eat yam.
Tips:
For the fresh creatures like loach, I am actually not very good at the cleaning process and do not like the process of cleaning. Adding salt to cover the lid is an experience taught by the older generation. First, you can easily remove the mucus from the loach without slipping your hands. Second, add it. The salt loach cover almost fainted for a while. Although I don't like its sticky feel and vigorous frying pan, for the family to cook it twice a week, the therapeutic effect is still good. The cleaned loach is put into the pot and stir-fried to get rid of the muddy smell. Try to use the least oil to fry the ginger slices so that the soup will be light and not greasy.
