[longyan Yongding] Minced Meat, Eggs, Vegetables and Rice Noodles

A small handful of dried rice noodles.

Bring the water to a boil, add dry rice noodles and cook until the chopsticks can pinch off the rice noodles.

The water after blanching the rice noodles is white rice milk, real rice noodles.

Blanch the rice noodles under cold water and set aside.

Cut the chopped green onion and celery and set aside.

Add hot oil to the pan and stir fragrant.

Pour hot shallot oil over the chopped celery and chopped shallots.

Add chopped green onion and eggs to the hot pot.

Tips:
1. When blanching rice noodles, as long as the chopsticks can be broken off, otherwise the head will be over-ironed, and it will not stick easily under cold water.
2. Get used to minced pork with scallion oil, boil the vegetables and remove them for later use, so that the taste is more delicious.
