Mapo Tofu

Cut the tofu into small pieces and blanch them in boiling water.

Prepare chopped green onion, garlic slices and minced ginger.

Heat the wok and pour the oil. After the oil is hot, add the peppercorns and fry until fragrant. Add the chopped green onion, garlic and minced ginger until fragrant. Add the beef and stir-fry the water, add the cooking wine and pepper, and stir-fry evenly.

Add Pixian bean paste and stir fry to get the red oil.

Put the tofu and stir-fry evenly, add half a bowl of water, bring to a boil, add salt to taste, stir-fry evenly, add water starch to thicken.

Add a little more chopped green onion.

Sprinkle with chives.

Put it out of the pot and serve it on the plate.
