Mapo Tofu

Cut the tofu into small cubes.

Put it in the pot and cook for two minutes.

Chop old ginger, green onions, shallots, and garlic for later use.

Heat up a pan with cold oil, 80% oil temperature, pour in the minced meat and saute until fragrant.

Push the minced meat to the side, add Pixian Douban and Douchi and stir fry until fragrant.

Pour in the minced ginger garlic and chopped green onion and sauté until fragrant. Add a spoonful of sugar.

Pour in tofu and half a bowl of water, add a spoonful of dark soy sauce, cover and simmer for 6 minutes.

Pour the gorgon juice, add chicken essence and monosodium glutamate, and collect the juice over high heat.
9.
After serving, sprinkle with chili noodles and pepper noodles, sprinkle with chopped green onion and serve.
