Marinated Chicken Liver

Wash the chicken liver and remove the tendons and grease on the surface, soak in water for 30 minutes

Put the chicken liver in a pot of cold water, boil on high heat and cook for 1 minute, remove the foam and wash the surface with hot water, dry it for later use

Put all the seasonings (cinnamon bark, tangerine peel, grass fruit, pepper, star anise, bay leaf, sugar, soy sauce and cooking wine) into the pot, then add the green onion and ginger and dried chili, add the chicken liver, boil, change to low heat and simmer for about 30 minutes. Finally, add salt to taste, turn off the heat and let cool. Soak the chicken liver in the marinade for 4 hours and eat it. It tastes better overnight.
