Mashed Potato Shreds

Peel the potatoes.

Shred and blanch in boiling water for 1-2 minutes (short time is not cooked, long time is not crisp), take a bite out while blanching.

After blanching, let the cold water go through and drain it for later use.

Add garlic, a little soy sauce, ground coriander, a teaspoon of salt, a teaspoon of sugar, a teaspoon of vinegar, a little sesame oil, and a teaspoon of chili oil (I put three spoons).
