Mashed Potato Shreds

Peel the potatoes and shred them.

Potato shreds are blanched in boiling water.

Take out the cold water.

Put the potato shreds in a dish under water control, add chopped garlic and shallots, salt and light soy sauce vinegar.

Heat up the oil in the pan, add the peppercorns and fry it on a low heat to create a fragrant flavor.

Remove the peppercorns, pour hot oil on the potato shreds, and mix well.
