Meat Stuffed with Tofu.

1. Wash the fresh meat and shiitake mushrooms separately.

2. Chop the green onion, ginger, and garlic into finely divided pieces.

3. Marinate all ingredients with white pepper, salt, chicken essence, sugar, starch, and cooking wine for five minutes.

4. Cut green onion, shredded ginger, and garlic slices.

5. Dried chili, chopped into circles, star anise, red-oiled watercress, set aside.

6. Cut the tofu into pieces, and use a tool to make a hole on the surface, remember not to dig through it.

7. Fill in an appropriate amount of meat that has been marinated in advance.

8. Heat the oil to 60% heat, and fry the meat side first.

9. Turn it over and fry on the other side. When turning it over, use a flat spatula to gently turn it over.

10. Saute the pepper and dried chili with hot oil in a pot, then add green onion, ginger, and garlic to fragrant.

11. Add water and light soy sauce to the pot and bring to a boil.

12. After the water is boiled, put the fried tofu with the meat side down into the pot and cook on medium heat.

13. Simmer over medium heat and turn the tofu over when there is half of the soup. When the juice is exhausted, the tofu can be served.
