Melon Strips Mixed with Chicken Gizzards

Wash chicken gizzards, blanch them with hot water, remove them and let cool for later use.

Beat the cucumber loose and cut into sections.

Add appropriate amount of water to the pot, add light soy sauce, dark soy sauce, salt, pepper, aniseed, and cinnamon. Bring to a boil. Put the chicken gizzards in the marinade and cook for 12 minutes. Turn off the heat. Soak in the refrigerator for 1 hour. Don't cook chicken gizzards for a long time, as they will harden and taste bad.

Slice the marinated chicken gizzards, put them in a large bowl with cucumber, add minced garlic, salt, cold soy sauce, cold balsamic vinegar, sugar, pepper oil, chili oil, sesame oil and mix well.
