Mushroom Oil Chicken Soup
1.
I put the oil chicken in the freezing after it was received, so I took it out in advance and thaw it.
2.
Cut half a piece with scissors or a bone cutter, and chop it open. Remember to cut off the chicken butt and throw it away. It is an unusable part.
3.
Cut off the chicken feet toes.
4.
The chicken has been cleaned up and cleaned up again. Rinse it several times with clean water to flush out the blood. Soak in cold water for more than half an hour.
5.
Then clean the mushrooms, they are all fresh, and no dried food is used.
6.
Clean and remove. Drain the water.
7.
The chicken nuggets do not need to be blanched, soak in cold water to soak out the blood, and there is almost no foam in the later stew. Finally, rinse and drain. Cut the ginger into two slices.
8.
Wash the casserole and wipe the bottom of the casserole dry. Add the ginger slices, pour the chicken pieces, and add half a pot of water.
9.
Pour the cooking wine.
10.
Cover, turn on high heat, and bring to a boil.
11.
After it is boiled, turn to low heat and simmer slowly. If there is any scum during this period, use a colander to remove it, and I will get 2 small pieces with almost no scum. So if you don't want to blanch, you must soak in cold water for more than half an hour.
12.
Remove the roots of the shiitake mushrooms and slice them for later use.
13.
From cutting green onion, you don’t need to chop very finely.
14.
Simmer on low heat for two hours, stirring 2-3 times during this time. Add mushrooms, stir well and let the mushrooms soak into the soup, continue to cover and simmer over low heat.
15.
After adding mushrooms for half an hour, add salt to taste, stir well, and continue to simmer for half an hour.
16.
Finally, sprinkle chopped green onion and stir well. You can turn off the fire cover for a while, or you can start it directly!
17.
Have a bowl! Super fragrant!
Tips:
1. No need to blanch the chicken, soak the chicken nuggets in cold water.
2. Simmer in a casserole for three hours. Mushrooms can be replaced by the types you like.
3. No aniseed, my kids will eat it. Except for the onion and ginger cooking wine, they don't need any aniseed.
