I have made a lot of noodles recently. I made noodles for the first time today. I have eaten the instant noodle version of noodles before. It may be that the noodles are too long and the noodles are lumpy. It doesn't taste good to stick together, so I haven't eaten it since then. However, I made the noodles by myself today and it tastes good, so I still have to rely on myself~

Noodles with Mushroom Spicy Sauce

1. Dice mushrooms, chopped green onions

2. Add olive oil to the pot

3. Add green onions and sauté

4. Add Pixian bean paste. If you think the bean paste is too big, you can chop it with a knife

5. Put in a bowl of water and cook on low heat

6. After the water is boiled, add the diced mushrooms and cook

7. Finally, add a little dark soy sauce and taste it. If it is not salty, you can add a little salt and shiitake mushroom hot sauce to make it.

8. Wash the lettuce and cut into three sections for later use

9. You can choose fresh noodles. My family has a lot of flour in miscellaneous grains, so I made soba noodles by myself. Put the flour and soba noodles in a bowl and put a little salt in it.

10. Add cold water and let it form a hard dough for about 30 minutes

11. Roll out the awake dough and cut into noodles of uniform thickness

12. Put the noodles in a pot and cook

13. When the noodles are half-cooked, add lettuce and cook for about 30 seconds. Then you can get it out. Put on the mushroom hot sauce and mix it up.

Tips:

The Pixian bean paste itself has a salty taste, and there are also soy sauces, so you must taste the saltiness when making the mushroom hot sauce.
