I always make thin noodles. This time I make a lasagna with my own potato frying sauce. The taste is really great~ It takes a lot of effort to make the noodles and make the noodles firmer. The noodles are not sticky, and they are strong.

Noodles with Potato Fried Sauce

1. Wash the lettuce and cut into three sections, cut potatoes into small cubes, cut coriander into sections, mince ginger, pat and mince garlic, and chop green onion

2. Pour oil in the pot to preheat

3. Add diced potatoes, and you can smell the aroma of potatoes when they fry on low heat.

4. Fried potato diced, take out when golden

5. Leave the bottom oil in the pot, add pork stuffing and fry

6. Add green onion, ginger and garlic

7. Add dried yellow sauce and Pixian bean paste

8. Add a bowl of water and cook on low heat. You can smell the meat when you cook

9. Pour in a little cooking wine to get rid of the fishy

10. Add diced potatoes and cook on low heat for 2~3 minutes

11. Add a little dark soy sauce and salt, and stir well. Be sure to taste the saltiness

12. Finally turn off the heat, sprinkle with coriander, and it’s ok

13. Put flour and soba noodles in a bowl, and a little salt

14. Add cold water to make a firm dough. After waking up for 30 minutes, this step is a laborious task. I was sweating profusely and strenuously when making the noodles, but if the noodles are too soft, they will stick together when the noodles are cut, and the noodles made will not have that texture. Vigor

15. Spread a layer of buckwheat flour on the chopping board. Of course, it can also be white noodles. I think adding soba noodles is healthier

16. Roll the dough sheet into a 0.3mm dough sheet, and then fold it in half and the hard dough will not be so sticky, but it is necessary to sprinkle a layer of flour every step of the way.

17. Cut into wider noodles

18. Make water in the pot, add the noodles and cook

19. Finally sprinkle lettuce and blanch it.

20. Take out the noodles, pour in potato fried sauce and start eating~

Tips:

You can add more oil when frying potatoes, and you don’t need to pour oil when frying pork stuffing, and there is oil in the pork itself.
