North African Eggs

Cut the onion and mushrooms into cubes, and cut the green peppers, red peppers, dried beans, and tomatoes into small cubes. Chop pepper and slice garlic;

Heat the pan, add olive oil, pour the chopped onion and green and red pepper into the pan and stir fry;

Put garlic, chili, and dried tofu in a pot and stir fry until the ingredients are slightly soft;

Put tomatoes and mushrooms in the pot and continue to stir fry;

Then add cumin, salt, and pepper to taste until the ingredients in the pot become soft. Then dig out four circles as shown in the picture to beat the eggs; (If you only put two eggs, you only need two pits, how come I like to talk nonsense)

Break the eggs into the circle. Cover the pot, turn on a low heat, and fry the eggs for 5 minutes;

Chop the shallots and coriander, and sprinkle in the pot before serving.

It's really delicious, my family makes breakfast often. The egg has no flow, but it is not fully cooked. It is very good. (Can't say it again, or you will find me a super foodie)
