Scallion pancakes are one of Shanghai's specialty snacks. Now the scallion pancakes made outside have been improved. I remember in the past that the scallion pancakes were baked after being fried. The scallion pancakes were very fragrant and the outer layer was crisp delicious. Now I'm making old-fashioned scallion pancakes by myself.

Old-fashioned Scallion Pancake

1. Mix flour, water and salt, knead into a smooth dough, wake up for 30 minutes

2. After waking up, divide the dough into 8 small balls

3. Roll out the dough into a beef tongue shape and coat with ghee

4. Put green onions

5. Then roll it up from top to bottom, and squash it when rolled

6. Put oil in the pan to heat up, put in the rolled dough and fry

Tips:

The flour should not be too wet, the longer the dough wakes up, the more chewy
