1. Main ingredients: kidneys, onions, garlic cloves, dried chilies

2. Processing pork loin: Wash the pork loin and cut it in half. (Picture) (If you find it troublesome, you can ask the master to help clean the white meridians inside the pork loin when purchasing)

3. Cut the white meridians inside the pork loin with a knife, and then cut the small ones with scissors. Try to deal with it as cleanly as possible, the smell comes from these white things

4. After cutting the white meridian, add 1 tablespoon of edible salt and rub it back and forth twice on the surface of the incision

5. Clean and drain. Put it in a bowl, pour 3 tablespoons of white wine or high-grade rice wine and marinate for a while

6. Rinse the pork loin with clean water and slice it. Wash the onion and cut into pieces, peel the garlic cloves and smash into pieces, wash the dried chili, remove the head and tail and cut into pieces

7. Heat a pan, pour some oil, add garlic and sauté

8. Add chili and peppercorns

9. Pour in the onion and stir fry for a while. (About 1 minute)

11. Pour down the kidneys and keep it on high heat and stir-fry until white

12. Add soy sauce and stir fry evenly

13. Add salt, chicken powder, and a little sugar

14. Pick up the pan and toss for a few times, add coriander and mix well

Tips:

Keep the high heat and stir fry quickly to keep the waist shape tender and smooth.
