Oven Version-spicy Grilled Fish

Scrape the scales of the grass carp, break it open from the back, remove the gills and internal organs, and clean it for later use.

Wash 60g dried chili and cut into sections. Peel and mince 20g garlic. Rinse 6g pepper and set aside.

Wash 1 green onion and cut into inch sections; wash and peel 40g ginger, mince half, and slice half; wash and cut 20g shallots and cut into long sections; wash and cut 20g coriander into sections.

Place the fish on the chopping board, and draw a diagonal knife on the fish at intervals of 1 cm to make it easier to taste.

Put the fish in a large basin, add sliced ginger, shallots, 20g cooking wine, 1g black pepper, appropriate amount of salt, 5g cumin powder, 5g chili powder, spread the seasoning evenly with your hands. After applying it, cover it with plastic wrap and put it in the refrigerator for more than 4 hours, preferably overnight.

Wrap the baking tray with tin foil, remove the shallots and ginger slices from the marinated fish, and put it in the baking tray. Preheat the oven, put the fish in the oven and bake at 230 degrees for 35 minutes.

Put a little more oil in the hot pan, add minced ginger and garlic, and fry until fragrant.

Add dried chili and Chinese pepper to fry until fragrant, add 50g of Pixian bean paste and 30g of fermented black bean paste to fry until fragrant, then add green onions and fry for fragrant, add 250ml of water to boil, add 5g of spicy fresh dew, appropriate amount of salt, and 10g raw Pump, 2g white vinegar, 5g chicken bouillon, 3g white sugar, simmer for 5 minutes until it tastes completely!

Tips:
1. 2 to 3 catties of fish is the best. It is too big to taste, and too small is not enough to eat.
