Panlong Minced Meat and Eggplant

After cutting the eggplant with a knife, soak it in water for more than 1 hour. Add a little salt and vinegar to the water.

Mince ginger, green garlic, and dried chili.

Peel and dice pork belly.

Drain the soaked eggplant and put it in a frying pan to fry until soft.
