Peach Gum White Fungus Soup
1.
Wash the impurities outside the peach gum, soak it in clean water for 12 to 18 hours (the soaking time is longer in winter) until it softens and the volume can increase by about 10 times. It needs to be stored in the refrigerator for overnight soaking in summer, and it is best to change the water twice during the soaking process.
2.
There are a lot of black impurities in the soft soaked peach gum, carefully remove it, and after repeated washing with water, break it into even small pieces.
3.
Soak the lotus seeds for 6-8 hours in advance and wash them. I use red lotus seeds.
4.
Soak the white fungus for about 2-3 hours, remove the root stalk and wash it clean.
5.
Pour peach gum, white fungus, and lotus seeds into the inner pot of the rice cooker, add water and rock sugar.

Tips:
1. There are many bark and other impurities in peach gum. If you can wash it off before soaking, try to wash it off first, otherwise it will be more difficult to wash after soaking.
2. You can mix and match the ingredients for the soup at will, such as red dates, saponaria rice, Sydney, etc. You just like it!
