Pepper Eggplant Noodles

Prepare the ingredients, hot pepper, and eggplant separately, wash and cut, and dry. Pick up the pan, add the oil, pour in the hot peppers and stir fry.

The eggplant is steamed in an egg cooker.

Stir-fry the hot pepper for a while, add the steamed eggplant and stir fry.

Cook the noodles in a separate pot, remove them when the noodles are about 7-8 mature, put them in cold water, and then drain the water.

Add water, light soy sauce, and salt to the hot pepper eggplant, cook thoroughly, turn off the heat, add the drained noodles and mix well.
6.
Load up!
Tips:
The eggplant is steamed first, and then stir-fried in the pot, so as to reduce the amount of oil in the pot.
