Rub the washed fish fillets, drain the water, then add the starchy egg whites and 1 g of salt, knead the fish fillets with your hands, let them evenly coat the starch and egg whites, and marinate for 20 minutes

2 If there are many people in the family, you can also use the fish head to make sauerkraut fish.
3 I make sauerkraut fish, every time I make it with grass carp, in fact, you can also use black fish or other fish.
4 If you like spicy food, you can add rice pepper when cooking sauerkraut. It will be spicy and taste good when combined with sour.
5 Make sure to cook fish fillets on high heat, not medium or low heat. What you want is to cook quickly.
6 Generally, people who make this dish will put bean sprouts and cucumbers and other vegetarian dishes in the bottom of the bowl, but I don't have this method. If you want to cook that way, friends can do it, as long as the dish is blanched first.
7 The pepper and chili can also be placed directly on the fish fillet, and then the oil is heated in the pot, and the oil is directly poured on the pepper and dried chili.
