Pickled Radish Slices

Wash the white radish

Cut the radish skins in half, and then cut them into thin slices

Add 10 grams of salt and marinate for 30 minutes

Pour out the marinated water, I also rinsed it with pure water and squeezed it dry

Add 10 grams of sugar and continue to marinate for 30 minutes, pour out the water, add 10 grams of sugar again and marinate for 30 minutes

After marinating with salt and two sugars, use a kitchen paper towel to absorb the moisture from the outside of the radish slices

Prepare the main seasonings: light soy sauce, dark soy sauce, rice vinegar, white vinegar and sugar

Add a small amount of purified water to the pot, add garlic slices, dried chili, light soy sauce, dark soy sauce

Add granulated sugar, stir well, boil on and off

After cooling slightly, add rice vinegar to make a marinated juice

After the juice has cooled down completely, add the dried radish slices and put it in the refrigerator overnight.

Tips:
The amount of marinated juice is better than the sliced radish! Online reference ratio: light soy sauce + soy sauce: sugar: vinegar: purified water = 7: 2: 1.5: 7
Add sugar and vinegar to adjust the taste according to your preferences!
