Pig Trotters Hot Pot

The pig's trotter is simmered in advance and used as a stock; the specific method: wash the pig's trotter, add cooking wine, and blanch the ginger slices in water, rinse again, put them in the stewing pot together with the ginger slices, green onions, and appropriate amount of water and simmer for 4 hours. After 3.5 hours, red dates and wolfberry can be added.

Prepare the hot pot base: 500g butter hot pot oil, 1 bag of dried chili pepper, 30g chili powder;

Put the dried chili and Chinese pepper in a bowl, soak in boiling water for 15-20 minutes, then drain the chili water, take only the dried chili and Chinese pepper;

Prepare other ingredients: salt, chicken powder, rock sugar, white wine, glutinous rice grains, ginger, shallots, garlic;

Pour the soaked dried chili and Chinese pepper into the pot;

Add salt, chicken powder, rock sugar, white wine, and glutinous rice;

Put the butter in the hot pot oil;

Pour in the clear soup of trotters;

Add ginger, shallots, and garlic; simmer for 20 minutes;

While boiling the hot pot, prepare some vegetables: wash the hot pot powder and soak it in water;

Wash the mushrooms, lettuce, and pea tips separately and drain the water;

Wash the rice cakes and set aside;

Prepare two dipping sauces: mix appropriate amount of sesame oil, garlic, coriander, oyster sauce, salt, chicken powder, soy sauce, balsamic vinegar, chili powder, spicy millet, and shallots;

After the hot pot is boiled, put in the pig's feet stewed in advance, let the pig's feet heat up, and let it taste; put the washed coriander before the pot;

Pour the cooked hot pot into the electric heating pot, move to the dining room, and turn on the power. Put the vegetables and the dipping sauce on it, and you can start it.
Tips:
1. The ingredients can be changed to what you like;
2. For those who can't eat spicy food, you can reduce the amount of chili and Chinese pepper; or make it into a clear soup hot pot.
